When I was in high school, and my mom began her quest toward healthy, clean eating and a healthy lifestyle in general, I hated every minute of it. No sugar allowed in our house, and our refrigerator was a sea of green and fruit colors. I would eat pizza and tater tots at school for lunch and bring home pints of Baskin Robbins chocolate chip ice cream and eat the entire thing in one sitting just out of frustration!
But, now, I could not be more grateful. I love, love, love the idea of being thoughtful about what goes into my body, it truly is my medicine…. even on the holidays!
Oops! Forgot to snap a pic before we dove it. It just looked so good! Tried a healthier, crustless of pumpkin pie this year. Here’s what I did: - 2 eggs
- 1/2 c almond milk.
- 3/4 c @big_tree_farms coconut sugar.
- 15oz @pacificfoods pumpkin purée. - 1 tsp pumpkin spice.
- 1 tsp vanilla.
- Bake in oven for 20 minutes at 375 degrees. - Chill in fridge 6-8 hours to solidify
