Oil-Free Crispy Potato Wedges!! BAE or NAY?
Give me all the carbs!!! 🙃 Still obsessing over oil-free crispy potato wedges 🍠 They’re seriously so easy to make. Plz do yourself a favor and try this recipe out!!
Evenly slice 2 large russet and/or sweet potatoes into wedges and toss into a pot of cold water. Bring water to a boil. Once the water comes to a boil, drain the potatoes. Season with a tiny bit of flour, onion powder, garlic powder, juice of 1/4 lemon, paprika, minced garlic, fresh rosemary (or whatever herbs you prefer!), sea sat + pepper. Place wedges with skin down on the tray to prevent them from sticking! Pop them into the oven at 425F for 40-50 mins. I like them super crispy so I leave them in longer 😋
Chewy Chocolate Chip Trailmix Cookies 🍪
Happy Friday!! Here's a little weekend recipe for ya🙌🏼 I'm normally not much of a baker but something about the holidays gets me in the mood. I've always been a lover of making (annnnnd eating) raw desserts but sometimes I like to make a big mess in my kitchen and bake up a storm👩🏻🍳 Eat these babies for breakfast, a snack or dessert... they're pretty much an anytime cookie! Have a GREAT weekend!!💛
↠ 1 cup gluten-free rolled oats, blended into oat flour (ap flour works for a non-gf option)
↠ 1/4 cup each: almond meal/flour, rolled oats, sliced almonds, coconut sugar, unsweetened shredded coconut, chopped pretzels, mini vegan chocolate chips (I used @enjoylifefoods)
↠ 2 tbsp each: sunflower seeds, pumpkin seeds, chia seeds, raisins or chopped dates
↠ 3/4 tsp cinnamon
↠ 1/2 tsp each: sea salt, baking powder, baking soda
↠ 1 tbsp ground flax + 2 tbsp water, mixed
↠ 1/4 cup each: raw almond butter, coconut oil, maple syrup
↠ 1 tsp vanilla
↠ Mix ground flax + water. Set mixture aside so it can gel up into a "flax egg"
↠ Whisk together dry ingredients.
↠ In a separate bowl, stir together wet ingredients (including flax egg).
↠ Add wet mixture to dry mixture and stir well until combined.
↠ Use a cookie scoop or your hands to form balls about 1.5 tbsp in size. Place on a baking sheet.
↠ Bake at 350F for 15 mins. Let the cookies cool for a few mins and transfer to cooling rack until they are completely cooled off to make sure they don't break apart. Enjoy!
Taco Tuesday! YAY or NAY?🌮🥗
Savory tempeh crumbles, caramelized onions, oyster mushrooms and bell peppers, organic sweet corn, sauerkraut, avocado, cabbage, butter lettuce and a cilantro lime sauce! 🥑🌽🌿
I finally made a successful batch of crispy oil-free fries! I used sweet potatoes, purple potatoes and Japanese sweet potatoes (my personal favorite!!). Apparently it's all about cutting fatty wedges, that's how you get the crispiness.
🍠For the potato wedges: Evenly slice the potatoes into wedges and toss into a pot of cold water. Once the water comes to a boil, drain the potatoes and season with a tiny bit of flour and spices. Pop them into the oven at 425 for about 30-40 mins.
🌮For the tempeh: Bring pot of shallow water to a simmer. Add a block of tempeh and simmer for 10 mins. Drain the tempeh and pat dry. Once the tempeh is cool, crumble it into pieces. Heat a tiny bit of oil in a large skillet over medium heat. Add tempeh, minced garlic and spices. Cook the tempeh for 5-7 mins. Add low-sodium shoyu (or coconut aminos) and maple syrup. I never measure but about 1-2 tbsp each to your preference! Cook for few more mins. Enjoy!!! 😋😋😋

The human anatomy is our best evidence that we are naturally plant-eaters. When I was first introduced to the vegan lifestyle, what really resonated with me was comparing our biological make-up with carnivores and herbivores. The proof was not just in the way I felt after switching to a vegan diet, it was also in the facts of how we are designed to be herbivores.
